How can you tell if your puppy/dog has been abused while out of your care?

Yes it does sound like she may have abused your dog in some way. Maybe you could just mention how strange she acts everytime that friend comes around and see what she says. Or ask her if the dog had any accidents in her house, thats usually the reason most people hit dogs. But i would definately say something about it.
